Mayonnaise Production
Mayonnaise often referred to as mayo, is a cold sauce or an emulsification used as a condiment. It is made by blending egg yolks and oil, then flavoured with varying combinations of vinegar, mustard, herbs, and spices.
The Process
The manufacturing process involves a continuous blending system which is employed to sustain the correct degree of emulsification along with pre-measured ingredients that are piped in through openings and fed to the dynamic mixer. Pre-sterilized jars move along conveyer belts as measured amounts of mayonnaise gets poured into the jars or bottles.
The Problem
Obtaining a homogenized emulsion of oil-water with required quantities of egg yolks, vinegar etc. is a great challenge. The oil drops will be larger if the oil has been emulsified into the water phase with low viscosity, resulting in a product that is less stable and less creamy. So, obtaining a fine and a consistent mixture is the key.
The Solution
A process intensified method is obtained by integrating the UADA module into the process, fine emulsified end product is achieved with simpler construction having no moving parts.
